
Oleana-trained chef and the mastermind behind Puritan & Company, Café Beatrice, The Lexington and Geppetto brings yet another tantalizing food concept to the Boston area.
Chef Will Gilson and team reveal AMBA, a Mediterranean-inspired fast-casual café opens at the forthcoming First Street Market in Cambridge on July 17. The menu doesn’t shy away from spice, with bold Mediterranean flavors and ingredients such as toum (garlic sauce), muhammara, and a top-secret spice blend perfectly seasoned rotisserie chicken.
What’s on the menu at AMBA Cambridge?
The restaurant itself adopts its name from an Indian sauce that traveled and evolved in the Middle East—encompassing the flavors you can expect to dance around in each bite.
The space offers breakfast until 11 AM. Some of the options leaving us drooling are the breakfast shawarma with sesame eggs, schmaltz potatoes, garlic sauce, herbs, pita and an option to add lamb or chicken sausage. For sweet options, you can try the sugar & spice toast with cream-soaked challah and spiced sugar.
Breakfast also includes fresh daily pastries from Chef Brian Mercury.
Pick from five mezze or try them all for dinner! Don’t miss the famous brined rotisserie chicken that’s spice rubbed, slow cooked, and finished with shawarma spice & dried roses.
As the name, AMBA, is a famous spiced mango sauce, similar to chutney but more savory, we’d be remiss not to mention the delicious sauces on the menu. Complement any dish with black garlic tahini, harissa, zhoug, dill ranch, or shawarma sauce.
For a sweet ending, AMBA’s halva shake has coconut milk, vanilla, and halva for cold nutty harmony.
